Morning, everybody! The best part of being an adult is making ice cream for breakfast. Today’s prep for my delicious pasta dough and chocolate ice cream should take less than an hour. Let’s get started.

Basic Pasta Dough
1 cup semolina flour
1.75 all purpose flour
pinch salt
1T olive oil
2 egg yolks
3/4 cup water


– Mix the dry stuff together.
– Mix the yolks in.
– Add the oil and most of the water.
– You may not need all of it depending on the climate.


Knead until the dough is firm. It should not be sticky if you put your finger in it. Wrap the dough up and let it rest overnight in the fridge.

Dark Chocolate Ice Cream
3 cups cream
1 cup milk
8 yolks
1.5c sugar
1.5c semisweet chocolate chips
66% 2T coco powder
1T vanilla


– scald cream and milk
– mix everything else together
– temper in 1 cup of the milk and cream into the chocolaty mix
– bring mixture back to 175f


– The mixture should coat the back of a spoon and stay put it you draw a line through it.
– Strain it through a fine sieve.
– Cool the mixture to 39f in an ice bath.

That’s enough for one day.
